went away with the mass use of the grinding machine in the post-depression era.
we now buy "ground beef"
as to cutlets:
our butchers have not disassembled birds on premise since the 60's
(nor would you want them to...)
no part of the chicken is called the cutlet...
it's called the breast
would you like me to thin-slice it for you?
