YAN CAN COOK

on the subject of food...

a man must have his daily bread

low-saturated fat is the way to go-( olive or vegetable oil-no butter and no-i repeat no "processed meats"(can you spell nitrates-i can- bad bad bad))

activa-one a day-omega-3-st. joe's baby
a cup of coffee-low fat lactate-no sugar
(or a fruited yogurt-or healthy cereal grains with soy milk)
maybe a juice
(v-8 is good- i like to mix my own-pear nectar-apple and pomegranete)
think anti-oxidants


mid a.m.

an apple-clean nuts (no salt-no sugar) walnuts-almonds-pecans
water

lunch
dry turkey breast sandwich(thanks "earl of..")
whole grain bread-tomato and spinach(uh-oh)
unsweetened iced tea

afternoon

small bag of suger snap peas
bag of naked chips

dinner

a lean protein (i choose no 4-legged animals-my choice)
if you must indulge
5-6 oz-top round or eye round(even better) or flank(marinate in lo-cal wishbone italian dressing for at least 2 hours.-center cut pork-veal cutlets.
((An aside-as to ground beef-if you must-buy the package ground on premise not the pre-pack
not sure-ask the butcher-it's higher in saturated fat-but much safer-believe me-i know)
or try the ground bison

i prefer chicken breast(or turkey breast-occasionally)
on sale every 5 weeks-stock and freeze

rice(brown)
beans(black-dark kidney-garbanzo)
broccoli(any thing green)
ever tried endamame? buy shelled and frozen

always
add sauted' celery,onion,carrot,pepper,shallot,garlic etc etc etc
(the "aromatics")

and "fresh" herbs

(know the difference between an herb and a spice)
((dont make me make you go a-googling)) ha ha
i'll save you the trouble:
HERB-a plant,usually a perennial (these days-see monsanto)
usually the leaves or stems
have medicinal values

SPICE-a part of a plant,usually the fruit,seed,nut bark,or root
has some medicinal values

and they both taste great
and are ever more available and affordable in today's marketplace
(use more herbs than spice)

dry red wine (high in tanins)
(water-an occasional beer-a virgin mary)

a little dark chocolate
water

(tap-no bottled-never ever
see the cost to society-do not give me this health arguement
you bathe and brush and cook with tap
but think drinking will somehow harm-use your god-given intelligence
will you please)

(yeah-there will probably be a mid-night run
most of us have learned how to sleepwalk to the john
keep the body and the brain-hydrated)

cup of hot tea or decafe
no lactate-never ever-sugar
(sacre blu')
try pure honey if you must sweeten
(in the tea)
and try black or green

and there are so many other variations

tuna-salmon(buy wild caught-not farm raised) sometimes shrimp or scallops
eat a peach-a pear-some state of washington cherries-blueberries!(wild are true brain food)
avacados are great if a "dry" (ease off on the mayo) is unappealing tho' be careful they are
high in calories (as are bananas-relatively)
pasta or couscous or vermicelli-use whole grain

like sauce? thicken with water the pasta boiled in and reduce
(dont add more flour or a slurry)
use tomato based sauces-not cream based

stay away from "white"
flour-rice-sugar
when it comes to food-refined is not a good thing

(get all the sensations-crunchy-velvety-al dente-sweet-bitter-and everything in between)

and eat slow... even slower

take it all in-enjoy

masticate

and then walk away from the table until another day.

PS: how come anorexia- bulimia is a disease and interventions occur
but obese people get let off the hook?
